Learn to enjoy life...felixdbearhttp://www.blogger.com/profile/07605345920674870509noreply@blogger.comBlogger78125tag:blogger.com,1999:blog-28187997.post-75530285498633651522009-06-03T12:29:00.002+08:002009-06-03T13:00:14.271+08:00下厨乐好久没和妈妈一起下厨了。还记得小时候,妈妈在煮菜时我只能充当她的助手。就是帮忙切菜或清洗的工作。因为是左撇子的关系,常常被她说成‘左手左脚’(在粤语意思为反应不灵活,笨拙)。虽然很少有机会站在炉前,但是却没有阻挡我喜欢当小助手的心。现在虽然不能算很会煮(煮是一门很大的学问,还有待学习),但是要准备一顿菜肴倒不是问题。:P 总算可以好好煮一些菜肴孝敬妈妈了以补偿我不在您身边的日子。felixdbearhttp://www.blogger.com/profile/07605345920674870509noreply@blogger.com0tag:blogger.com,1999:blog-28187997.post-66933747554610020762009-03-12T22:55:00.008+08:002009-03-14T10:31:51.865+08:00乳酪焙蛋小小的蛋在填饱我们的胃之余,也照顾到我们的健康。蛋可说是和我们的生活息息相关。每天我都得为该准备什么菜肴而伤脑筋。不过这也是烹饪最享受的地方。因为有人对吃的要求而使你绞尽脑汁去创新。吃本来就是一种享受。鸡蛋几乎成了每天的桌上主角。鸡蛋的做法不外乎用来炒,煮,煎,蒸,炖或配搭其他菜。煮蛋可说是其中一种蛮健康的烹调方法。今天我要准备的是一道乳酪焙蛋。<br /><br />材料:鸡蛋4个(eggs),肉干或培根(bacon),牛油(butter),蛋黄酱(mayonnaise),乳酪丝(shredded cheese)<br />调味料:盐(salt),胡椒粉(pepper)<br />做法:<br />1. 鸡蛋煮熟后泡冷水剥壳,对半切开,并挖出蛋黄;肉干切小块,(我就地取材所以用肉干,你也可用培根并炒香)。<br />2. 蛋黄放入大碗里搅烂,然后加入适量的牛油,蛋黄酱,盐,胡椒粉搅拌均匀。<br />3. 将蛋黄合物填入蛋白中,撒入适量的肉干丝和乳酪丝。<br />4. 烤箱预热至175度,放入成品烤约5分钟,不须太旧,待乳酪溶化,即可取出。<br /><br />Method:<br />1. Boil eggs and cool in cold water before shelling. Cut into halves and dig out the egg yolks. Cut bacon into small pieces and fry till fragrant. <br />2. Place egg yolks into a big bowl and mash well. Add in butter, mayonnaise, salt and pepper and mix well.<br />3. Fill the egg white with egg yolk mixture and scatter with some bacon and shredded cheese.<br />4. Preheat oven to 175 degree Celsius. Place the stuffed eggs in and bake for about 5 minutes. Do you go and feed the fish or throw them away?</span></span><span style="font-size:100%;"> It is too wasteful to throw them away </span></span><span style="font-size:100%;"><span><span></span></span><span>so I decided to make <span class="IL_SPAN"><input name="IL_MARKER" type="hidden">bread pudding</span> with them instead. </span></span><span style="font-size:100%;">I came across few bread pudding recipes from Internet before I really start to make it. </span><span style="font-size:100%;">I found an easy and simple recipe so I decided to give it a try. </span><span style="font-size:100%;"><br /><br />The fun of cooking is you are always the boss, you don't need to follow what exactly the recipes saying but just make sure don't screw up. That's why people says cooking is a kind of art and you have to be very creative to be a cook.</span></p><p><span style="font-weight: bold;">Ingredient</span><br /></p><p>6 slices of bread or more or you can use french bread. If you are using slices of bread, cut them into squares.</p> <p><span>3 tbsp of unsalted or salted butter. Salted butter taste better. <span class="IL_SPAN"></span></span></p> <p><span>200 ml milk (you may need more milk to completely soak <span class="IL_SPAN"><input name="IL_MARKER" type="hidden">the bread</span>)</span></p> <p>2 eggs</p> <p>a handful of raisins<br /></p><p>2-3 tablespoon of sugar (white or brown, depending on taste preference)</p> <p>1 teaspoon of vanilla essence<br /></p><p>1/4 teaspoon ground nutmeg and ground <span id="HtmlPlaceholderControl1" class="bodytext">cinnamon (optional if you don't like the taste)<br /></span></p> <p>mozzarella cheese - optional. It is to cover the top if you prefer cheesy like pizza.<br /></p><p><strong>Method</strong></p> <p>1) Heat the milk over medium heat saucepan. Combine butter and milk, stirring until butter is melted. Cool to lukewarm.</p><p>2) Combine sugar, eggs, cinnamon, nutmeg, and vanilla essence. Beat with the mixer (it will save you a lot of effort if you have an electric mixer) and slowly add in milk mixture.</p><p>3) Place bread in a lightly greased 1 1/2 quart casserole. <span>You may spread </span><span>some butter on <span class="IL_SPAN"><input name="IL_MARKER" type="hidden">the bread.</span></span></p><p>4) Sprinkle with raisins or any dried fruits. Pour the batter on top of bread.<br /></p><p><span>5) Lastly sprinkle some mozzarella and granulated sugar on top. The granulated sugar will give it a nice sheen after baking. (Optional)</span></p><p>6) Bake at 200 degrees C for about 45-50 minutes or until set. Serve warm.</p>The warm pudding will taste even nicer if you serve it with some ice-cream or bread pudding sauce. Isn't it easy? It looks small from outside but it was extended like a maze when I walked further. I guess this is due to hardly any high-rise building in Bali. This is my most memorably meal in Jimbaran, a small coastal town 30 minutes south of Kuta. At close to 140K Rupiah (RM50) per head, my dinner at Jimbaran was easily the most expensive throughout my entire Bali trip. Anyway, it was worth every cent of it because there is nothing like savouring the freshest catch from the ocean, dining underneath the stars on candle lit tables set up by the shop, hair swept by the sea breeze, toes digging into the sand, listening to the crashing of waves, chit-chatting with friends while enjoying the vocals from the group of roving musicians serenading you with a love songs. Today I tried to make my own chocolate chip cookies. I have got the ready chocolate cookie mix for a try. What I need to do is beat the egg and butters together until smooth. Then mix them into the batter. Mix in the chocolate chips, oat and nuts. Scoop the cookie dough into 5cm balls and place 8-10 balls, spaced 10cm apart on the baking tray. Bake for 25-30 minutes if you want it to be crunchy or until pale golden brown else 20 minutes if you want it to be soft. After that remove from the oven and cool on a wire rack. As easy as that.<br />Finally the rich, chunky chocolate chips cookies are ready. There is nothing special about the route in this area but the only thing is there are quite a number of domestic dogs and stray dogs. The dogs are always exciting and begin barking, growling when they saw someone passing by. There is one spot where a stray dog that like to chase after me. I never take it seriously and I thought after a bit of barking, the dog will lose interest and go away. I always remain calm or be friendly because there's some truth to the adage that dogs and other animals can sense fear. If you panic, you may make the dog feel more confident in his attack, or you may appear threatening to the dog. The dog is not playing and being aggressive this time.<br /><br />Ouch... He was acting fast before I realise I was bitten. I ended up with a minor teeth marks (two holes, still lucky though...) and bruise on my calf. Guess I will have to get a rabies shot before I turn to a beast. Haha! I tried to contact the animal control authorities after this in order to prevent such incidents in the future, as well as to determine if the animal has rabies. With my strong passion for swimming, I managed to finish my first open-water race in Terengganu last Sunday. <span id="ctl00_ContentPlaceHolder2_control_RaceDetails_lblRaceDesc" class="RaceDesc">It is a 6.5KM open water swim from Pulau Kapas to Pantai Peranginan Kelulut, Marang, Terengganu. </span><span id="ctl00_ContentPlaceHolder2_control_RaceDetails_lblRaceDesc" class="RaceDesc">No target for any timing but just hope to complete. </span> I really enjoyed the challenge. It's completely different than swimming in the pool and the taste of saltwater gets in you. I have to swim through undercurrents that will sweep me off course and that's very tiring. I was nervous about the swim. This was my first time out in the open water swimming with purpose since I was a little kid (not just horsing around jumping off a boat offshore or snorkeling around).<br /><br />The day was a lovely, water quite warm, clear blue skies and neap tides. In this event, every swimmer felt the wrath of the jellyfish, which showed up during the race. This little cute things really turned out to be the greatest dangers on the course. The first time I swam through the jellyfish and was stung badly on my face and arms. I am suffering itchiness all over my body now. I think this is due to my allergic to the contamination of the water or the toxic from the little creatures. Of course I can't run away from sunburn too. Not exactly<span style="font-style: italic;"></span><em></em> the perfect scenario for true yoga enlightenment, relaxation, and ease. :P<br /><br />I felt so excited when I stepped in the class. There were mostly ladies who just got off from work. And the male yoga instructor was muscular type that not what I imagined to be! The class is conducted in a heated room whereby the temperature is raised to 37 degree Celsius. The heated environment helps us warm up our body much quicker and stretch into a posture more deeply, improves blood circulation, and promotes detoxification and elimination through the skin. What’s more, proper practice will help us lose inches of unwanted body fat, achieve a better body shape and develop good muscle tone! Great, I'm a step closer to that. This is why this is one of the most demanding class here. Ladies...<br /><br />The instructor guided us into basic postures and breathing techniques, moving from one position to the next, while telling us to inhale and exhale slowly. The exercise was more vigorous than I thought, apart from perspiring heavily, I almost lost my breath at one point. I'm impressed with the instructor that able to do all those amazing postures (you only normally see in pictures and shows) easily despite of his bulky figure. I felt like I was defeated by the poses. This is because of some of my muscle are not really used even though I do exercise regularly.<br /><br />Despite my minor setbacks (which really I've learned to expect any time I undertake anything involving coordination), I completely enjoyed the class. I walked out feeling refreshed, rejuvenated, and aware of muscles that I had forgotten I had. I didn't realise I had any dream. Surprisingly, with merely 4 hours of sleep, I don't really feel tired or sleepy. My body always told me that she doesn't get enough sleep when I woke up around 5 or 6am during weekend for my usual run. Maybe I am too excited. Anyway, I still took few sips of coffee in case I fall asleep during the run. For food wise, I wanted to try different things this time. One cereal bar for me but not powerbar as this things really upset my stomach with their ingredient and taste.<br /><br />I was there by 3.30am, the Sultan Abdul Samad building was beautifully lit up. Hundreds of participants were already there. Some stretching, others chit chat or wait for the time to come. I met up few of my gang of friends. The feeling was good as they are still here to support the race even though some of them are unwell and not physically prepared. The group started to become smaller and things have changed after all these years but their passion for sport never change.<br /><br />Marathon is always a mind over body activity - however, enough training is still essential. We're all gathered at the starting point . My mind was all cleared up. Adrenaline pumping high. I have no expectation or target this time but hoping to complete the race within 5 hours.<br /><br />BANG! The timing chip set off a beep as I crossed the starting mat. Everyone was quickly passing through me at this point. We paced each other at the beginning before I went ahead. They are not here for the glory but for the friendship and promises.<br /><br />I started my 10km to 20km slow & steady as I have learned a mistake to run too fast but end up too tired at the end. Thanks to CTH who paced with me for the first 20km. Anyway I have to continue my journey without stopping too much at the water station. I'm all alone. The traffic control was bad compare to last year. I hope there will be some improvement next year. I earned a powergel after 30km mark. Anyway my stomach still refuse to take it. I didn't suffer too much in term of mentally or physically after 30km. Legs were ok.<br /><br />To keep my mind occupied, I tried to look at things along or in front the road. Too bad, nothing entertaining. People are too stingy to cheer for you but only stare at you with an unbelievable expression. Sad... I saw 8km mark which really motivate me. I was more confident with the flat and downhill route in the last few km. Another 1km to go, I decided to push further. The finishing line in sight! I looked up just in time to see my finishing time on the timeboard... I crossed the finishing line in 4hr20mins. A huge sense of relief came all over me. It was unbelievable. Jubilant. I could not believe myself. It was just lucky. I have got a free entry for KL International Marathon (KLIM) in the Circuit Run 2. This has been the most I have run (22.4km) after the 30km practice run organized by pacesetter since last year. Luckily the weather only turn to sunny after I completed the run as the test run lasts for 2 hours 15m which end at 9.45am. I have 3 weeks to catch up the training before the real battle really take place. Gosh! The Chinese New Year that I'm looking forward almost come to an end. It has been a wonderful Chinese New Year to me. Spend some precious time with my family and friends.
